AKA: The BEST Side Salad

Mike’s Salad all started with a local pizza place that’s since closed. They had this AMAZING side salad that went perfect with their real Italian pizza. My mouth waters thinking about it. Anyway, we decided to try and replicate it at home and now it’s our all time favorite side salad.

To make the salad you will need:

Ingredients:

  • 1 bag of lettuce (we prefer butter or romaine lettuce)
  • 4 mozzerella cheese sticks
  • 1/4 cup sliced green olives
  • 2 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp sugar/sweetener
  • Salt and pepper to taste

Step 1: Chop up that lettuce smaller. I use kitchen scissors. It’s much better when the lettuce is bite size.

Step 2: Cut the cheese. We want bite size pieces again. You could of course use slices or shredded mozzarella as long as your cheese is small. It’s more fun to have cheese circles in your salad.

Step 3: Add those green olives. Yes. Green ones. Just wait until you taste it all together. You’ll get it. My husband hates olives, but he LOVES this salad.

Step 4: The dressing. Add in equal parts of olive oil, sugar/sweetener, and red wine vinegar. I like it best with sugar or Splenda. Red wine vinegar is best. The brand in the picture above is my favorite. A few twists of salt and pinch of pepper to taste. I have found 2 Tbsp of each works best for this size of salad. Then mix it all up.

Step 5 (optional): I like to let the flavors meld together for about 10 minutes. It tastes great if you do and if you don’t do this step. Completely up to you here.

Like I said earlier, Mike’s salad is great with anything Italian. However, it also pairs well with other dinners as well. We have this salad with just about everything. I hope you enjoy! Let me know if you try this recipe below.
