What a Monday today was. It was one of those slept less than 4 hours and almost didn’t wake up when the alarm went off kind of days. I always say you shouldn’t wish your life away, but I’m glad to be on the tail end of today.
I had such high hopes for myself too. I had a crock pot meal planned, a ten hour work shift, and a list of other boring things I planned to accomplish…but guess what. It’ll wait for another day. This mom is TIRED. But even tired moms want dessert sometimes. So I decided to whip up a pie real quick tonight. It’s going to be my reward for adulting.
Alright, let’s get to cooking!

Ingredients:

  • 1 Oreo pudding mix
  • 2 cups of heavy whipping cream
  • 1 chocolate graham cracker pie crust
  • 1 container of whipped topping
  • 10-12 Oreo cookies (optional, but recommended)

Step 1: add heavy whipping cream into your stand mixer and dump pudding powder on top. Turn on low speed to mix together. Scrape down the sides to make sure it’s mixed together well. Then, beat on medium speed for 2 minutes.
Step 2: fold in half of the container of whipped topping to the pudding mix. Keep folding until combined. Here is where I crushed up some extra Oreo cookies and added into the filling. Optional, but highly recommend for that added cookies and cream goodness.
Step 3: Pour into prepared chocolate graham crust. Add the remainder of the whipped topping on top of the pudding layer. Chill 4 hours or until set. Garnish with extra cookies if desired. Now, enjoy!
