Today is PI DAY!!! Of course I had to celebrate somehow. But…I have a confession. I don’t like pie. I know. I’ve heard it all. But trust me. I have tried every type of pie there is…I just don’t like it. I’d much rather have cake or something. BUT in high school I tried French silk pie and I LOVE IT. I love it so much that I did some research on how to make it. I was all good until I saw I needed raw eggs and EW I just can’t do it. Nope. So I settled for a close second. This is essentially a chocolate pudding no bake pie. It’s chocolatey. It’s silky. It’s close enough without raw eggs. It’s a win in my book!

Let’s get cooking! (Well sort of. It’s a no bake pie). You will need:


Ingredients:

-2 boxes of chocolate pudding

-3 cups of heavy whipping cream

-1 prepared graham cracker crust

-1 container of whipped topping

Step 1: put both pudding mixes into your mixer with the whisk attachment and add the 3 cups of heavy whipping cream. Let it mix on low speed first and scrape the side as needed to thoroughly combine.

Once it seems to be mixed enough, we’re going to crank up our speed. I went for a medium/high speed on my mixer (level 6-8) and mixed for 2 minutes until I got to this consistency:

It’s going to look like a chocolate whipped topping, but have a much thicker consistency.

Step 2: we’re going to add half of the container of whipped topping. There’s no need to measure, just eyeball and use a rubber scraper to cut your whipped topping in half. Add it into the bowl with your chocolate pudding mix and fold it in.

The mixture will be thick but it will make a nice milk chocolate color once mixed together.

Step 3: we’re going to add this into our graham cracker pie crust and smooth it out.
Step 4: add the rest of your whipped topping and smooth it in a layer on top of the chocolate layer.
you can get fancy and shave some chocolate on top if you want. Otherwise, I put the top back on from my crust and chill in the fridge for 4-6 hours or even overnight. You could plan ahead for this dessert and make it the day before.
