This is a newer recipe to our weekly rotation. We’ve had chicken dressing bake and chicken pot pie before…but this is a mashup that’s the best of both worlds! Super kid friendly. Full of veggies so you can feel good about feeding it to your family. Oh and did I mention it’s easy?!


Ingredients:

  • 1 bag of frozen mixed vegetables
  • 1 box of chicken flavored stuffing mix
  • 1 can of cream of chicken
  • 1 cup of cooked chicken
  • 3/4 cup of sour cream
  • 1/2 cup of cheddar cheese
  • 1/2 cup of chicken broth
  • Margarine
  • salt and pepper to taste

Step 1: steam the frozen mixed vegetables in the microwave. While they are cooking, grease an 8×8 pan with olive oil. Add the cooked veggies straight to the bottom of the pan. Top with the cooked chicken. If you use rotisserie chicken, you won’t need to season. If you’re using plain cooked chicken like I am, here is where I add a dash of both salt and pepper to taste. You don’t need a ton because the stuffing mix is your big flavor punch in this recipe.

Step 2: in a separate bowl, combine cream of chicken, sour cream, cheese, and chicken broth. Give it a good mix to combine. I add the chicken broth last to make sure I have the right consistency.

Step 3: pour the mixture on top of the chicken.

Step 4: pour the box of stuffing mix and spread evenly across the cream layer.

Step 5: add small pats of butter/margarine on top of the stuffing layer.

Step 6: Bake at 350° for 35-45 minutes. The layer of stuffing should get a golden brown toast to it.

Enjoy! I served mine with some fried cabbage and pickled beets. This meal is a huge hit with my family. I love that they’re getting vegetables!
