How did air fryer vegetarian burritos happen? Well, tonight was one of those nights where I hadn’t meal planned and wasn’t sure what to make. I had no meat thawed out and my instant pot was still in the sink from last night. I scrolled through my Pinterest for some inspiration and then I headed to my pantry to see what was there.
In my pantry, I saw some instant brown rice and remembered how I made vegetarian burritos one time after church on a Sunday and they were a hit! The only issue being I used a slow cooker recipe that time and it was already 4 pm today. So I popped out my rice cooker and made some rice. I dumped a can of drained black beans and salsa in the rice. I decided to make some air fryer vegetarian burritos!
To make the burritos you will need:
Ingredients
- Rice and beans
- Salsa
- Cheese
- Tortillas
- Shredded lettuce
- Crushed tortilla chips (optional)
- Sour cream
- Olive oil spray
Once your rice is made, you’re ready to assemble your air fryer vegetarian burritos!
Step 1: Lay out your tortilla. I laid mine on a paper plate (less dishes!). Add a layer of cheese and then a layer of rice mix.
Step 2: Add your crushed up chips (optional), sour cream, and lettuce. Add another final layer of cheese. Adding the cheese first and last will give you a nice melty, cheesy burrito. Roll up your burrito tightly.
Step 3: Preheat your air fryer at 400° for 5 minutes. Once preheated, spray your air fryer with some olive oil. Place burritos in the air fryer seam down and generously spray the top of them with olive oil. Cook at 400° for 3 minutes, flip and cook another 2-3 minutes.
The burritos will have a light golden brown crispy tortilla outside to them. Right underneath the crispy is all of that melty cheese we added twice!
We chose to dip ours in some extra salsa and the kids dipped in sour cream. I served extra tortilla chips on the side. You could also get a Mexican restaurant vibe by making a rice and salad side with the burritos. These were very filling for a vegetarian meal. My husband didn’t even miss the meat because these have such a great flavor.
We actually had enough leftover rice to make burritos and freeze them for a future night that I forget to prep dinner. I had 5 extra burritos from my extra supplies tonight.
To make a freezer burrito, you add your cheese and rice mix only. Then wrap your burritos individually in cling wrap. I let mine cool off, and stuck them in the freezer for another day where dinner time sneaks up on me. Here are mine ready to be frozen:
