I recently discovered my love for rice this past year. I mean, yes, I have always gotten rice when I get Chinese food…but that was about it. I never ate other rice. Unless it was in a burrito or something. I would never go out of my way to eat rice. BUT it’s good for breast milk production….soooooo…I started looking for ways to incorporate more of it after my last pregnancy. This is one of my favorite recipes I discovered that I will keep making even after I’m no longer breastfeeding because it’s just so good.

Here’s what you need:

Ingredients:

  • 8 thinly sliced pork chops
  • 1 1/2 cups of white rice
  • 1 packet of onion soup mix
  • 2 cans cream of chicken
  • 2 cups of chicken broth
  • Garlic salt, black pepper, mustard powder, and paprika to season to taste

Step 1:

Preheat oven to 350 degrees. Spray a 9×13 pan with nonstick cooking spray and add in your rice and onion soup mix. No need to mix at this step yet unless you just really want to.

Step 2:

Add in both cream of chicken soups and chicken broth and stir all together. Season both sides of the pork chops with seasonings to your liking. I personally like garlic salt, black pepper, ground mustard, and paprika. A sprinkle of each on both sides is enough. Once seasoned, add the pork chops on top of the rice mixture. Cover with aluminum foil and bake. The aluminum foil helps keep the moisture in and cook the rice, and also not dry out our pork chops. These are going to bake for an hour and a half at 350. Cook time may vary depending on your oven and thickness of pork chops. I like to use a meat thermometer to confirm that the inside of my pork chop has cooked.

Step 3:

After 90 minutes, remove from the oven and remove foil. Enjoy the heavenly smell of a warm dinner filling your kitchen. Each pork chop will have a serving of delicious rice underneath it. I like to remove the pork chop, then scoop the rice next to it on a plate. Enjoy with whatever sides you like. Tonight we had honey butter carrots and fried cabbage.

The beautiful thing about this recipe, is that you can prep it ahead of time. I will typically throw this together on a Sunday for an upcoming weeknight that I either work or we have an a sport event to attend. Throw everything together as above, top with foil, and throw it in the fridge until you’re ready to bake it. Meal prep helps keep us on track and also helps me to budget when I grocery shop.
